Ingredients
Mixed Into A Stuffing
1/4cupcrumbled paneer
1/4cupsoaked and chopped sun-dried tomatoes
1tbspchopped jalapenos
1tbspfinely chopped basil
salt and freshly ground black pepperto taste
Other Ingredients
8medium sized boiled and peeled potatoes
1cupwhite sauce
2tspbutter
salt to taste
Instructions
Mix all ingredients for stuffing and keep aside.
Heat the butter in a broad non-stick pan, add the potatoes and little salt and saute on a medium flame for 2 to 3 minutes or till they turn light brown in colour from all the sides.
Core the potato vertically through the centre using a corer so that a hollow cavity is created for the stuffing.
Stuff each of the potato with the prepared stuffing, place them on a greased baking dish and top with the prepared white sauce evenly over it and bake in a pre-heated oven at 200ºc (400ºf) for 10 minutes.
