Ingredients
¼cuplime juiceabout 1 large lime
¼cupapple cider vinegar
2tablespoonsolive oil
1tablespoonhoney
½teaspoonsalt
1small-to-medium red onionthinly sliced (2 cups)
4cupsthinly sliced purple cabbage
1cupthinly sliced radishes
½cupcoriander leaveschopped
1cupcoconutshredded
Instructions
In a large serving bowl, combine the lime juice, vinegar, olive oil, honey and salt. Add the remaining ingredients and toss to combine.
Set aside for 20 minutes, tossing occasionally.
Taste, and add additional salt if necessary. This salad is best served between 20 minutes to 3 hours after preparing, but it will keep for up to 3 to 4 days in the fridge.
