Ingredients

  • 4 slices ciabatta cut into chunks
  • olive oil
  • 1 artichoke hearts jar approx 280g, drained
  • 10 black olives halved
  • 3 large roasted red peppers from a jar cut into pieces
  • 1 tbsp red wine vinegar
  • 2 handfuls rocket

Instructions

  1. Toss the ciabatta with 2 tsp olive oil and bake in a 190C/fan 170C/gas 5 oven until golden.
  2. Put the artichokes, olives and peppers in a large bowl. Whisk the red wine vinegar with 2 tbsp olive oil and season. Add to the bowl and toss everything, then add the croutons and rocket and toss again. Pile onto plates and serve.
