Ingredients
4slicesciabatta cut into chunks
olive oil
1artichoke hearts jarapprox 280g, drained
10black oliveshalved
3largeroasted red peppers from a jarcut into pieces
1tbspred wine vinegar
2handfulsrocket
Instructions
Toss the ciabatta with 2 tsp olive oil and bake in a 190C/fan 170C/gas 5 oven until golden.
Put the artichokes, olives and peppers in a large bowl. Whisk the red wine vinegar with 2 tbsp olive oil and season. Add to the bowl and toss everything, then add the croutons and rocket and toss again. Pile onto plates and serve.
