400gchickpeastin
½smallred onionfinely sliced
½tspcumin seedstoasted
1red chillifinely chopped
olive oil
1tbspred wine vinegar
150glong-stemmed broccolichopped and blanched
2largeroasted red peppers from a jarchopped
100gfetacrumbled
½smallflat-leaf parsley bunchchopped
Instructions
Heat the chickpeas through in their liquid, then drain well and toss with the onion, cumin, chilli, 2 tbsp olive oil, and vinegar. Add the broccoli and peppers, season and toss. Divide between bowls then scatter over the feta and parsley.
