Ingredients

  • FOR CREPE
  • 1 cup Whole wheat flour
  • 1/4 cup sooji semolina (optional)
  • Salt to taste
  • 1/2 cup curd
  • Water as needed to make a thin batter
  • FOR LASAGNE
  • 1 cup Bell peppers chopped
  • 1/2 cup Spinach leaves cleaned
  • Salt and Pepper for seasoning
  • Oregano for seasoning
  • Red chili flakes for seasoning
  • 1 cup Pizza sauce
  • 1 cup Cheese grated

Instructions

  1. Mix crepe ingredients together except water. Add water as you mix. The batter should be thinner than pancake batter.
  2. In a flat griddle, make crepes a little smaller than the pan in which you will make lasagne.
  3. Take batter in a ladle and pour it on a hot griddle. It will spread and form shape on it's own. No need to spread.
  4. Use very little oil and drizzle on the sides.
  5. Flip the crepe when you see bubbles on top.
  6. Cook on the other side and take it out.
  7. Make other pancakes similarly.
  8. Layer a small sauce pan with salt (prevents from burning) and keep a steel plate or mesh on top.
  9. To assemble, place a crepe, then mixed bell peppers, sprinkle seasoning, cheese, pizza sauce and close it with a crepe.
  10. Now place spinach leaves, mixed bell peppers, sprinkle seasoning, cheese, pizza sauce and close it with a crepe. Keep layering till it's balanced.
  11. As a last layer, sprinkle some cheese and red chili flakes.
  12. Cover the pan and cook on low heat for about 10 minutes or until the cheese has melted.
  13. Serve hot with pizza sauce.

Tips:

  • Vegetable Variations: You can swap the zucchini and mushrooms for any vegetables you prefer, such as eggplant, bell peppers, or even a medley of roasted vegetables. Adding a handful of frozen peas or corn can also add some sweetness and color.
  • No-Boil Noodles: Using no-boil lasagna noodles speeds up the process, but if you don’t have them, you can use regular lasagna noodles. Just cook them ahead of time, drain, and then layer them in the skillet.
  • Cheese Swap: If you prefer a lighter version, you can substitute the ricotta with cottage cheese or cream cheese.
  • For Extra Flavor: Add some red pepper flakes for a little heat, or a drizzle of balsamic glaze for a tangy sweetness right before serving.

Serving Suggestions:

  • Side Salad: Serve the skillet lasagna with a light green salad or a Caesar salad to balance out the richness of the dish.
  • Garlic Bread: A side of garlic bread or bruschetta pairs wonderfully with lasagna.
  • Wine Pairing: This dish pairs well with a medium-bodied red wine like Chianti or a light Italian Pinot Grigio.

Health Benefits:

  • Vegetables: Packed with fiber and vitamins, the vegetables in the skillet provide essential nutrients while adding flavor and texture.
  • Lower Carb Option: Using no-boil noodles and vegetables makes this lasagna lighter and a bit healthier than traditional versions.

This Vegetarian Skillet Lasagna is the perfect comforting dish without the need for baking. It’s quick, easy, and a delicious way to enjoy the flavors of lasagna in a fraction of the time. Enjoy!
