A tasty and nutritious rice dish, tomato rice is made mostly with basmati rice and spiced tomato masala. It is a great recipe for a one-pot supper or lunchbox and may be served for breakfast and dinner. Usually served without a side dish, it tastes wonderful when paired with a favourite sour raita.
Many flavorful rice dishes are common in south Indian cuisine, and they are typically made from leftover rice. Rice, vegetables, and spices are combined and cooked together in the traditional pulao recipes, which are made from scratch. However, quick and easy rice recipes, like tomato rice, may be made in a matter of minutes using cooked rice.
The method for making tomato rice, or rice with any vegetable flavour, is rather straightforward. To make mushy tomato masala, I’ve included onions, veggies, and other spices in this dish. Later, it’s simply combined with cooked rice and sautéed until it no longer remains sticky. Additionally, I’ve added mint leaves to the rice, which enhances the flavour, although this step is entirely optional. By making a thick paste of coriander, green chilies, and pudina leaves and adding it to tomato masala, I further extend this dish. To produce vegetable-based tomato rice, you can also include additional dry vegetables such green peas, finely chopped potatoes, mushrooms, and gobi.
Also some things to keep in mind and advice for making the simple tomato rice recipe. First and foremost, for the greatest outcome, I strongly advise using ripe and sour tomatoes, particularly roma tomatoes. To speed up the cooking process, you can use use store-bought tomato purée. Second, I combined the tomato masala paste with pre-cooked, dry rice in this recipe. However, you may also prepare tomato rice in the cooker as an alternative. Basically, if you stick to the rice to water ratio of 1:2, you should be fine. Finally, sona masuri or basmati rice can be used to make tomato rice. Although I used basmati in this post, sona masuri should also taste fantastic.

Ingredients
- 4 cups cooked rice
- 1.5 cups ripe tomatoes finely chopped
- 1/2 cup onion finely chopped
- 1 tsp ghee
- 1 tsp oil
- 1/2 tsp black mustard seeds
- 1 tsp split urad dal
- 1/2 tsp cumin powder
- 1/2 tsp minced garlic
- 2 green chillies finely chopped
- 1/4 tsp turmeric powder
- 4 tbsp of finely chopped coriander leaves finely chopped
Instructions

Heat the oil + ghee in a pan and add the mustard seeds and urad dal.

When the mustard pops and the dal turns golden, add the finely chopped onion or shallots along with the green chillies, slit.

Let the onions saute to a golden brown and then add the garlic, cumin powder, and turmeric. Saute for a while longer (30 seconds or so) for the garlic to get toasted.

Add the chopped tomatoes to this and cook on low flame.

When the tomatoes begin to cook and turn soft, help it along by smashing it with your ladle.

In about 5-7 minutes, you should have a mushy tomato paste mixture. Add salt at this stage and turn off the heat.

Mix in the cooked rice. Add some first and see if the rice is flavoured right for you. Some like their tomato rice on the milder side so add more rice if that sounds like you. I used the proportions mentioned above and it was perfect for us.

Mix well and let the rice sit for 30 minutes at least before serving.

Before serving, add the chopped coriander leaves and mix again.

Serve tomato rice warm with raita or any vegetable curry of choice.
Tips:
- Rice Tip: If you prefer fluffy rice, make sure to cook the rice separately first and then mix with the tomato masala. This prevents the rice from becoming too mushy.
- Additional Vegetables: You can add vegetables like peas, carrots, or bell peppers to the tomato rice to make it more nutritious.
- Spice Level: Adjust the quantity of green chilies and red chili powder according to your preference for spiciness.
- Flavor Variation: For an extra layer of flavor, you can add a small piece of cinnamon stick or a few cloves while tempering the spices.

- Tomato Rice is often served with raita (yogurt with cucumber, onions, and spices) or a tangy pickle.
- It can also be paired with crispy papad or a simple vegetable curry.
