Tips for Restaurant-Style Veg Kadai:

  1. Fresh Ground Spices: The key to a flavorful curry is freshly ground spices. Try grinding the spice mix just before cooking to bring out the full aroma.
  2. Use Ghee: Using ghee instead of oil will give the dish a richer, more authentic taste.
  3. Cooking Vegetables: To keep the vegetables tender but not mushy, avoid overcooking them. You can also blanch the harder vegetables like carrots and beans beforehand.

  5. Variation: You can use any combination of vegetables you like, or even add paneer for a richer dish.
