Ingredients

  • 2 cup cucumber thinly sliced
  • 1 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp red chili powder
  • 1/4 tsp sesame seeds
  • 2 green onions chopped

Instructions

  1. Mix soy sauce, vinegar and sugar in a bowl.

  2. Add cucumber to the mixture.

  3. Then, add 1/2 tsp chili powder and sesame seeds. Mix well.

  4. Add chopped green onions and mix again.
  5. Serve immediately for the most fresh and crunchy cucumber flavor. You can also let it sit for 10-15 minutes for the cucumbers to absorb the dressing.

Tips:

  • Spice Level: You can adjust the amount of gochugaru or chili flakes according to your spice preference. If you prefer a milder version, reduce the amount or omit it altogether.
  • Cucumber Variations: Korean cucumbers are typically thinner and have fewer seeds. If you can’t find them, regular cucumbers are perfectly fine, but make sure to remove the seeds if they are too large.
  • Sweetness: You can adjust the amount of sugar depending on your preference for sweetness. Some versions of this salad are sweeter, while others are more tangy and savory.
  • Make Ahead: The salad tastes even better after the flavors have had a chance to meld together. You can make it in advance and refrigerate for up to 1-2 hours before serving.

Health Benefits:

  • Cucumbers: Low in calories and high in water content, cucumbers are hydrating and promote digestive health. They are also a good source of vitamins K and C.
  • Garlic: Known for its anti-inflammatory and immune-boosting properties, garlic adds both flavor and health benefits to the salad.
  • Sesame Oil and Seeds: Rich in healthy fats, sesame oil and seeds provide antioxidants and support heart health.
  • Rice Vinegar: This type of vinegar is gentler on the stomach than some other vinegars and provides a mild tang to the salad.

Korean Cucumber Salad is a vibrant and easy-to-make dish that brings together the perfect balance of fresh, spicy, tangy, and umami flavors. It’s an excellent addition to any meal and a perfect way to enjoy cucumbers in a flavorful way!
