Ingredients

  • 2 little gem lettuce quartered lengthways
  • olive oil
  • 1 gluten-free bread slice, cubed and toasted
  • 1 tbsp hazelnuts toasted ad roughly chopped

Dressing:

  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 lemon juiced
  • 20 gm parmesan or vegetarian alternative grated, plus 1 tbsp extra to serve

Instructions

  2. Heat a griddle pan to a medium-high heat. Lightly brush the Little Gem quarters with olive oil and grill for 3-4 minutes on each cut side until charred.
  3. Whisk the dressing ingredients in a bowl, adding 1 tbsp of water if it’s too thick.
  4. Drizzle over the lettuce and top with croutons, hazelnuts and grated cheese.

Tips:

  • Grill Marks: For extra flavor, char the outer edges of the lettuce until they are blackened. This adds depth and smokiness to the salad.
  • Dressing Adjustments: If you like your dressing tangier, add extra lemon juice or Dijon mustard. If you prefer a creamier version, increase the amount of mayonnaise or yogurt.
