  • green chutney as needed
  • sweet chutney as needed
  • butter to spread on bread
  • 1/2 tbsp red chilli powder
  • 1/4 tbsp amchoor powder
  • 1/4 tbsp chaat masala
  • 1/4 tbsp cheese grated
  • coriander leaves
  • salt as needed

Instructions

  1. Soak the channa overnight or 10 hours and boil. Drain the water.

  2. In a wide bowl add the cooked channa, potato, red chilli powder, amchoor powder, chaat masala and salt. Add finely chopped coriander leaves.

  3. With a masher, mash the potato and slightly mash the channa and mix well. Our stuffing for the sandwich is ready.

  4. Take a bread and spread butter on one side of the bread. On the other side add little green chutney(keep the chutney thick) and sweet chutney. Spread them well.

  5. Add some grated cheese on this and spread some channa aloo mixture on it. Spread some more cheese on the top. Spread butter on another bread and cover this stuffed bread with the buttered side facing upwards.

  6. Cook this in a sandwich maker. Serve hot.

Tips:

  • Bread choice: You can use any bread of your choice for this sandwich. Sliced whole wheat bread, white bread, or even multigrain bread works well. For a more indulgent version, you can use brioche or baguette for a richer texture.
  • Customize the filling: Feel free to add other ingredients like boiled corn, cucumber, or pomegranate seeds to your filling for added crunch and freshness.
  • Vegan option: For a vegan version, skip the butter and use a plant-based butter or oil. You can also omit any dairy-based chutneys.
  • Make ahead: The filling can be prepared in advance and stored in the refrigerator for a few hours or overnight, making it a quick and easy meal when you’re short on time.

Serving Suggestions:

  • Chutneys: Serve with additional tamarind chutney or green chutney on the side for dipping.
  • Side dishes: Pair the Aloo Channa Chaat Sandwich with a cooling raita (yogurt-based side dish), potato chips, or a salad for a complete meal.
  • Drink: This sandwich goes perfectly with a refreshing glass of Nimbu Pani (lemonade) or buttermilk (chaas).
