A Simple recipe for rice that has been flavoured with raw mango that is great for lunch boxes or breakfast. A popular dish in Karnataka in south India, chitranna is often made with leftover rice and a bit of sour and spice.
With lemon juice and other spices, leftover rice is used in the traditional preparation of chitranna rice. For a tart flavour and to add the lemon flavour, lemon juice is added. However, the mavinakayi chitranna recipe for mango rice substitutes raw, tart mangoes for the lemon juice.

Ingredients
- 3 cup Cooked Rice
- 1 cup Grated raw mango
- 1/4 tbsp Turmeric powder
- Salt as needed
For the seasoning
- 2 tbsp Oil
- 1 tbsp Mustard seeds
- 2 tbsp Bengal gram/channa dal
- 1 1/2 tbsp Urad dal
- 2 Red chillies (break it into 2 pieces)
- Hing -a pinch
- 2 Green chillies slit
- 1/4 cup Peanuts
- Curry leaves - few
Instructions

Fry peanuts separately and keep it aside.

Heat oil in a pan, add mustard seeds, when it splutters, add bengal gram, urad dal, red chillies, green chillies and hing.

When dal turns golden brown, add peanuts, turmeric powder, salt needed and curry leaves.

Add grated mangoes and mix well to combine with the spices. Cook for just 2-3 seconds and switch off the flame.

Add cooked rice and mix gently using a fork taking care not to break the rice. Check for salt, add if required.

Enjoy mango rice with chips or papads as side dish.

- Adjust the Spice Level: You can adjust the number of green chilies or red chilies according to your preferred spice level.
- Add Nuts: For extra crunch and flavor, you can add a handful of roasted cashews or peanuts while tempering the spices.
- Vegan Version: Make this dish vegan by using oil instead of ghee.
- Leftover Rice: This dish is perfect for using up leftover rice, just make sure the rice is cool and separated to avoid a mushy texture.
