Ingredients

  • 4 Kachoris
  • 2 cups whisked curds (dahi)
  • 1 cup chickpeas boiled
  • 4 tbsp green chutney
  • 8 tbsp khajur imli ki chutney
  • roasted cumin seeds
  • chilli powder for sprinkling
  • 1 cup sev
  • 4 tbsp finely chopped coriander (dhania)
  • salt to taste

Instructions

  1. Break the kachori in a bowl.

  2. Put ¾ cup of beaten curds, 1/2 cup chickpeas, 1 tbsp green chutney and 2 tbsp khajur imli ki chutney evenly over it.

  3. Sprinkle little cumin seed powder, chilli powder, salt and ¼ cup sev evenly over it.

  4. Finally garnish it with 1 tbsp coriander evenly on it. Serve immediately.

Tips:

  • Filling Variations: You can replace the moong dal with mashed potatoes, spiced peas, or even a combination of both for a different filling.
  • Chutneys: Both tamarind chutney and mint chutney are crucial for giving the chaat its signature tangy and spicy flavor. You can adjust the chutney quantities based on your taste preferences.
  • Crispiness: To ensure the kachoris stay crisp, avoid adding too much yogurt at the time of serving. Serve the yogurt separately for people to drizzle over the kachoris themselves.

  • Bake the kachoris instead of frying them. Brush them lightly with oil and bake at 375°F (190°C) for 25-30 minutes until golden brown.
