Ingredients

  • 2 tbsp oil
  • 1/2 tbsp red chilli powder
  • 1/2 tbsp coriander powder
  • 1/2 tbsp garam masala powder
  • 1/4 tbsp jeera powder
  • salt as per taste

Instructions

  1. Rinse baby potatoes well to get rid of dirt. Pressure cook for 4-5 whistles. Once pressure releases, peel off the skin. Carefully prick each potato with a toothpick, just few holes is enough. Set aside.
  2.  In a mixing bowl, add all the spice powders along with salt and oil.

  3. Mix well. Now add the potatoes and give a quick mix. Let it to marinade for 15mins atleast.

  4. In a kadai, heat oil add mustard seeds and curry leaves, let it splutter. Then add the potatoes and saute for atleast 5-10 mins in low flame till its fried well. If it sticks add little oil and keep sauteing.

  5. Serve with rice / phulka!

Tips:

  • For extra crispiness: After boiling the potatoes, you can lightly mash them with a fork or potato masher to create a slightly crinkled surface. This will make the potatoes crisp up better when fried.
  • Spice variations: Feel free to adjust the spices based on your preference. You can also add a pinch of cumin powder, garam masala, or chat masala for added depth.
  • For a richer flavor: If you’re using mustard oil, it will impart a stronger flavor to the dish, which is very traditional in many Indian households.

Serving Suggestions:

  • As a side dish: Serve Small Potato Fry as a side dish with dal (lentils) and rice, or with roti or paratha.
  • Snack: It can also be served as a snack with green chutney or tamarind chutney on the side.

If you prefer a healthier version, you can use less oil or even roast the potatoes in the oven. Toss the boiled potatoes with the spices and a little oil, then roast them at 200°C (400°F) for about 20-25 minutes, flipping halfway through, until crispy.
