Ingredients

  • 1 cup curd
  • 2 tbsp mustard oil
  • 1/4 tbsp black pepper powdered
  • 1/4 tbsp ajwain
  • 1/4 tbsp ginger paste
  • 1/4 tbsp mustard seeds
  • 1/2 tbsp salt
  • 250 gm arbi

Instructions

  1. Boil the arbi till tender, cool and peel. Slice lengthwise and add yogurt, ginger paste, ajwain, and black pepper to it. Marinate for 10 minutes.
  2. Heat oil in a heavy pan and add mustard seeds. Dip in the marinated arbi and saute well till dry. Add salt and cook for a few more minutes.

  3. Serve hot with rumali roti or naan.

Tips:

  • Texture of Arbi: Make sure the arbi is boiled just right—overcooking can cause it to become too mushy. It should be tender but still hold its shape.
  • Yogurt Consistency: Make sure the yogurt is whisked well and is not too sour. Using fresh yogurt will give the dish a smoother texture.
  • Spices: You can adjust the spice levels to your preference. Adding green chilies and ginger-garlic paste will give it a nice kick, but you can reduce the spice for a milder version.
  • Vegan Version: For a vegan version, you can substitute the yogurt with coconut yogurt or cashew cream, and ghee with oil.
  • Crispy Arbi: For a variation, you can fry the boiled arbi pieces before adding them to the gravy for extra texture.

Variations:

  • With Coconut: You can add freshly grated coconut or coconut milk to the gravy for a richer, slightly sweeter taste.
  • With Kasuri Methi: Adding kasuri methi (dried fenugreek leaves) at the end adds a lovely aroma and flavor to the dish.
  • Add Peas: You can also add boiled peas to the curry for extra flavor and nutrition.
