Ghee Rice is a simple, aromatic, and flavorful rice dish made by cooking rice in ghee (clarified butter) with mild spices. Ingredients

  • 5 tbsp Ghee
  • 2 cup Basmati Rice
  • 4 cup Water
  • 1 cup Onions Sliced
  • 2 no Green Chilies
  • 1 no Cinnamon
  • 4 no Cloves
  • 4 no Cardamom
  • 2 no Bay Leaf
  • 2 tsp Cumin Seed
  • 10 gms Cashew Nuts Chopped
  • 10 gms Raisins
  • 0.50 cup Fried Onions

Instructions

  1. Soak the rice in water for an hour. In a large pan, heat ghee, add the cashew nuts, raisins and roast until the cashew nut color changes to golden brown and raisins become plump. Remove cashew nuts and raisins using slotted spoon and keep aside until needed.
  2. Add the cinnamon stick, cloves, cardamom, bay leaves and saute until nice aroma comes out.

  3. Add the cumin seeds, sliced onion, green chilies and cook until onion becomes soft.
  4. Add the soaked rice and saute for a minute. Add water, salt and mix well. Bring it to boil, cover and cook until the water gets absorbed by rice completely. Garnish with roasted cashew nuts, raisins, fried onions and mix well.

Tips:

  • Adding Cashews and Raisins: To add more richness and flavor, you can toast a few cashews and raisins in ghee separately and add them on top after cooking.
  • Spices: You can experiment with other whole spices like star anise or mace for a more complex flavor profile.
  • Rice Variation: Ghee rice is usually made with basmati rice for its aroma, but you can also use jeerakasala rice or any long-grain rice variety.
