Tips for the Perfect Corn and Onion Raita:

  • Onions: To reduce the sharpness of raw onions, you can soak them in a little cold water for 5-10 minutes before adding them to the raita. This helps mellow their flavor.
  • Corn: You can experiment with roasted corn for a smoky flavor or add some sautéed corn if you prefer a richer taste.
  • Sweetness: If you like a slightly sweet flavor, add a pinch of sugar. It helps balance the tartness of the yogurt and the spiciness of the chilies.
  • Chill before serving: This raita tastes best when it has had some time to chill and the flavors are well combined. You can make it ahead of time and store it in the refrigerator for a couple of hours.
