Ingredients

  • 3/4 cup chopped and parboiled pumpkin kaddu/ bhopla
  • 1 1/2 cups curds dahi
  • salt to taste
  • 2 tsp oil
  • 1/2 tsp mustard seeds rai / sarson
  • 1 tsp urad dal split black lentils
  • 1/4 tsp asafoetida hing
  • 5 curry leaves kadi patta

Instructions

  1. Combine the curds and salt in a deep bowl and mix well using a whisk.
  2. Add the pumpkin and mix gently. Keep aside.
  3. Heat the oil in a small non-stick pan, add the mustard seeds, urad dal, asafoetida and curry leaves and sauté on a medium flame for a few seconds.
  4. Pour this tempering over the pumpkin-curd mixture and mix gently.
  5. Refrigerate for atleast 1 hour and serve chilled.

Tips:

  • Spice variations: If you prefer more heat, you can add green chilies or a dash of black pepper.
  • Consistency: Adjust the consistency of the raita by adding a little water if it’s too thick.
