This is a simple dish that has the same flavour as the gobi masala found in restaurants. There are numerous delicious gobi dishes available. This recipe is really fantastic.

I purchase gobi or cauliflower once a week at home. I occasionally experiment with different gobi recipes. I typically prepare this aloo gobi. If aloo gobi isn’t available, I’ll prepare gobi paratha, a mix-veg dish, or I’ll add the cauliflower to biryani, pulao, or pav bhaji.

The gobi masala recipe is straightforward and easy to follow. The curry pairs well with rotis, naan, tandoori roti, cumin rice, or just plain steamed rice because it has more restaurant-like characteristics.

Ingredients

  • 2 cups Cauliflower florets
  • 3-4 Cloves
  • 4-5 Garlic cloves
  • 1 tbsp Carom seeds
  • 4 tbsp Oil
  • 1/2 cup Onion chopped
  • 1 tsp Green chili and ginger paste
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Garam Masala powder
  • 1 cup Gravy Base
  • Salt to taste
  • 1 tsp Lemon juice
  • 1/4 cup Coriander leaves chopped

Instructions

  1. Mix together cauliflower, salt, 2 tbsp oil, cloves, garlic and carom seeds.
  2. Bake in a pre-heated oven @ 180 degree C for about 13-15 minutes or until golden brown and done. You can even pan fry them till golden.
  3. In a pan, heat 2 tbsp oil. Add onion and saute for a minute.
  4. Add green chili and ginger paste and saute for a few seconds.
  5. Add turmeric powder, garam masala, gravy base and salt to taste. Mix well
  6. Now add baked cauliflower, garnish with coriander leaves, put lemon juice.
  7. Garnish with coriander leaves, green chilies and serve hot with chapatis or roti.

Tips for Perfect Gobi Masala:

  • Spices: You can adjust the spices according to your taste. If you like a spicier dish, you can add more red chili powder or green chilies.
  • Cream or Yogurt: For a richer, restaurant-style flavor, use fresh cream. If you want a slightly lighter version, you can substitute cream with yogurt. Whisk the yogurt before adding it to the gravy to prevent it from curdling.
  • Blanching cauliflower: Blanching the cauliflower before adding it to the gravy helps it cook quickly and also removes any bitterness. It also helps retain the bright white color of the cauliflower.
  • Vegan Option: You can skip the cream and use cashew cream or coconut milk for a vegan version of this dish.
  • For extra flavor: You can also add a pinch of sugar to balance the acidity of the tomatoes and bring out the sweetness of the dish.

Variations:

  • Add peas: You can add green peas to the curry for a different texture and additional flavor.
  • Add potatoes: To make it heartier, you can add boiled or cubed potatoes along with the cauliflower.
  • Roast the cauliflower: For a smoky flavor, you can roast the cauliflower florets in the oven for 15-20 minutes at 180°C (350°F) before adding them to the gravy.

  • With naan or roti: Gobi masala pairs perfectly with soft, buttery naan or chapati.
  • With rice: Serve it with plain steamed basmati rice, jeera rice, or even pulao for a complete meal.
